Sizzling Beef Chilli |

1 tbsp olive oil 1 large green pepper, deseeded and cut into cubes 4 spring onions, finely chopped 450g quick cook lean beef steak, cut into thin strips 500g jar Uncle Ben’s Hot Chilli Sauce 2 tbsp fresh chopped coriander 2 tbsp lime juice 2 limes cut into wedges |

1.Heat the olive oil in a large non-stick frying pan and stir-fry the green pepper and spring onions for 3 minutes 2.Add the beef strips and continue to stir-fry for a further 6 minutes, ensuring the beef is browned 3.Pour the Uncle Ben’s Hot Chilli Sauce into the pan and simmer for 5 minutes, stirring occasionally 4.Finally, stir in the fresh coriander and lime juice and serve
Serving Suggestions: Serve with either Uncle Ben’s Express Mexican Rice or Express Long Grain Rice and some soured cream. Garnish with sprigs of coriander and lime wedges.
Cooks Tip: The sizzling chilli can also be used as a filling for fajitas to provide a quick and easy Mexican supper recipe. As a purely vegetarian dish, replace the beef with thick strips of aubergine and miss out point 2 which will save another 6 minutes.
