1. Heat the oil in a large saucepan and fry the chicken breasts for 4–5 minutes. 2. When the chicken is browned all over, add the yellow pepper and then stir-fry for a further 2–3 minutes. 3. Then pour in the Uncle Ben's Tikka Masala Sauce, bring to the boil and simmer for 10 minutes. 4. Next, add the cherry tomatoes and simmer for 5–6 minutes until the tomatoes are hot and the skins are just starting to split. 5. Finally, stir in the cream and serve up with Uncle Ben's Basmati Rice or Uncle Ben's Express Pilau Rice.
Tip: If you're clean out of chicken, this works just as well with lamb. |
