Turkey Tikka Masala

Serves 4
Preparation: 10 minutes
Cooking time: 25 minutes


500g jar Uncle Ben's Tikka Masala Sauce
1 tablespoon of oil
600g diced turkey breast
50ml whipping cream
2 tbsp fresh coriander, chopped (optional)

Marinade
100ml natural yoghurt
1 lemon, squeeze for the juice
1 garlic clove, crushed
1 tsp fresh root ginger, finely chopped
1 tsp garam masala
1 tsp paprika
1 tsp fresh mint, chopped (optional)
1 tsp fresh coriander (optional)
 
Turkey Tikka Masala

1. Combine the marinade ingredients and coat the diced turkey meat. Allow to marinate in the fridge.
2. Heat the oil and fry the turkey until cooked through, then reduce the heat.
3. Add Uncle Ben's Tikka Masala Sauce and heat through.
4. Stir in the whipping cream and garnish with the fresh chopped coriander.
5. Serve with Uncle Ben's Basmati rice or Uncle Ben's Express Pilau rice.

Tip: this recipe also works well with cooked turkey, so if you're looking for an easy Boxing Day meal, just heat the oil, stir-fry the cooked turkey for a couple of minutes and then go straight to step 3
