Hot Chilli Beef with Nachos |
Serves 4 Preparation: 10 minutes Cooking time: 17 minutes Cost per serving: £1.65 using Manchego Cheese, £1.39 using Cheddar Cheese
500g minced beef 1 onion, diced 1 red pepper, de-seeded and diced 1 red chilli, de-seeded and finely diced 500g jar Uncle Ben’s Hot Chilli Sauce 200g lightly salted tortilla chips 100g Manchego or Cheddar cheese, grated |

1. Fry the minced beef, onion, red pepper and chilli together in a pan until the beef has browned. Add the Uncle Ben’s Hot Chilli Sauce and pour into a shallow 2 litre ovenproof dish 2. Scatter the tortilla chips over the sauce and sprinkle with the cheese 3. Grill for 2 minutes or bake at Gas Mark 6, 400°F, 200°C, 180°C Fan for about 7 minutes until the cheese has melted and the tortillas are golden brown and crisp
Serving Suggestions: Serve hot with soured cream and guacamole.
Cooks Tip: To cut down on the washing up, make the chilli in a hob and ovenproof casserole or sauté pan for a one pot winter warmer.
