Mixed Bean Chilli

Serves 4
Preparation: 20 minutes
Cooking time: 17 minutes
Cost per serving: 0.80p


1 tbsp olive oil
1 tbsp garlic paste
1 medium red onion, chopped
100g fine green beans, trimmed and chopped
2 stalks of celery, chopped
1 large carrot, peeled and finely chopped
400g can of mixed beans in water, rinsed and drained
500g jar Uncle Ben’s Medium Chilli Sauce
 
  Mixed Bean Chilli
1.Heat the oil in a non-stick pan and add the garlic paste, onion, green beans, celery, and carrots. Stir-fry the vegetables for about 6-7 minutes or until the onion is soft.
2. Add the mixed beans and Uncle Ben’s Medium Chilli Sauce mix, bring to the boil and then reduce the heat and simmer for 10 minutes or until the vegetables are cooked.

Serving Suggestions: Serve with Uncle Ben’s Express Mexican rice and purple sprouting broccoli.

Cooks Tip: This chilli could also be mixed with Uncle Ben’s Express Long Grain Rice and served cold as a spicy salad. A great idea for a picnic lunch.
