Spicy Sausage Hotpot |
Serves 4 Preparation: 5 minutes Cooking time: 25 minutes
2 tbsp olive oil 1 large red onion, cut into wedges 8 plump spicy pork sausages 2 bay leaves (optional) 500g jar Uncle Ben's Cajun Sauce 400g/14oz tin mixed pulses, drained and rinsed |

1. Heat the olive oil in a large deep frying pan and fry the onions and sausages until browned all over. 2. Then tip in the Uncle Ben's Cajun Sauce and stir in the bay leaves if using. 3. Next, bring the mixture to the boil, and simmer for 10–12 minutes. 4. Then stir in the beans and simmer uncovered for a further 5 minutes until heated through. 5. Finally, season to taste, and serve with Uncle Ben's Long Grain Rice.
Tip: for a vegetarian option, use vegetarian sausages instead of pork | |
