Hoi Sin Duck with Mango |
Serves 4 Preparation: 10 minutes Cooking time: 10-12 minutes
1 tbsp groundnut oil 2 skinless duck breasts, thinly sliced 1 red onion, cut into thin wedges 2 carrots, trimmed and cut into slices on the diagonal 1 red pepper, deseeded and cut into strips 1 yellow pepper, deseeded and cut into strips 175g/6oz sugarsnap peas, halved lengthways 500g jar Uncle Ben's Hoi Sin with spring onions sauce 1 small mango, stone removed, peeled and thinly sliced

1. Heat the oil in a wok or large frying pan and stir fry the duck for 3 minutes until is cooked. Remove with a slotted spoon and set aside. 2. Add the onion, carrot and peppers to the pan and stir fry for 3-4 minutes. Scatter over the sugarsnap peas and cook for 1 minute. 3. Return the duck to the pan and pour over the sauce, stir well and then scatter over the mango, simmer for 3-4 minutes without stirring until piping hot. Serve spooned over Uncle Ben's Long Grain Rice.
