Peanut and Chicken Curry |
Serves 1 Preparation: 10 minutes Cooking time: 12–15 minutes
2 tsp olive oil 1 small skinless chicken breast, cut into 3 long strips 1/2 small red pepper, seeded, cored and cut into chunks small handful, about 50g/2oz frozen peas 170g pouch of Uncle Ben's Just for One Satay Sauce Fresh coriander (optional) Uncle Ben's Express Long Grain Rice to serve |

1. Heat the oil in a saucepan and fry the chicken and red pepper for 3–4 minutes stirring occasionally. 2. Add the peas and 3 tablespoons of water and simmer for 5 minutes. 3. Stir in the Uncle Ben's Satay Sauce and simmer for 2–3 minutes until heated through. 4. Serve spooned over Uncle Ben's Express Long Grain Rice and garnish with fresh coriander if liked.
