Stir Fried Sweet and Sour Chicken |
Serves 4 Preparation: 10 minutes Cooking time: 10 minutes
1 tbsp vegetable oil 75g/3oz unsalted cashew nuts 4 skinless chicken breasts, each cut into 3 long pieces 125g/4oz baby corn cobs, halved lengthways 500g jar Uncle Ben's Sweet & Sour Sauce 2 spring onions, trimmed and shredded Uncle Ben's Long Grain Rice or Uncle Ben's Express Egg Fried Rice to serve |

1. Heat the oil in a large frying pan or wok and stir-fry the cashew nuts for 1–2 minutes until golden and browned. Remove them with a slotted spoon and drain them on kitchen paper. 2. Next, add the chicken pieces and baby corn to the pan and cook over a high heat for 3–4 minutes until browned. 3. Then pour over the Uncle Ben's Sweet and Sour Sauce, bring to the boil and simmer for 4–5 minutes. 4. Finally, serve spooned over Uncle Ben's Long Grain Rice and scattered with the toasted cashew nuts and spring onions.
