When The In-Laws Pop Over For Dinner At The Last Minute

Citrus Pork Steaks With Apple & Onion Fried Rice

Serves 4
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes

Ingredients
2 x 125g bags Uncle Ben’s Long Grain Boil in Bag Rice
4 pork loin steaks or pork chops
4 tbsp 3 fruit marmalade
2 tbsp olive oil
Finely grated rind of 1 lemon and 1 orange
Salt and freshly ground black pepper
25g butter
1 tbsp olive oil
2 small red apples, cored and chopped
1 medium red onion, peeled and chopped
1 tbsp freshly chopped thyme
 

  Citrus Pork Steaks

Method
1.Cook the Uncle Ben’s Boil in the Bag Rice according to the instructions on the packet
2.Cook the pork steaks/chops under a medium grill for 10 minutes turning occasionally
3.To make the glaze, gently heat the marmalade, 1 tbs olive oil, lemon & orange rind and seasoning in a saucepan until melted
4. Brush the pork generously with the glaze and cook under the grill for a further 5-8 minutes turning and basting occasionally
5. Melt the butter and remaining olive oil in a small saucepan; add the chopped apple and onion and sauté for 3-5 minutes until softened and golden. Stir in the thyme
6. When cooked, stir Uncle Ben’s Boil in the Bag Rice in with the apple and onion mixture, mix well and season to taste
7. Serve the pork chops immediately, with the apple and onion rice
8. For a delicious accompaniment, try serving this with freshly cooked shredded red cabbage
