1. Slice the courgettes lengthways into thin slices, and blanch them for 1 minute. 2. Next, cut each fillet in half and wrap each one in two courgette slices. 3. Then butter an ovenproof dish, add the fish wraps and cubed tomatoes and season with salt and pepper. 4. Next, pour over the white wine, cover the dish with aluminium foil and bake in the oven (200°C/392°F) for half an hour. 5. Cook the Long Grain and Wild Rice according to the instructions on the packet. 6. Finally, garnish with thyme sprigs and serve with Uncle Ben's Long Grain and Wild Rice. |
