1. Preheat the oven to 200C/400F/Gas Mark 6. 2. Par-boil the potatoes in lightly salted boiling water for 10 minutes. Drain well. 3. Then spoon half the jar of Uncle Ben's Thai Coconut Curry Sauce into the bottom of an ovenproof dish and scatter over half the spring onions. 4. Next, arrange the potatoes over the top so that they overlap each other slightly. 5. Scatter over the remaining spring onions. 6. Then pour the milk into the remaining sauce in the jar, screw the lid back on and shake well until combined and pour over the potatoes. 7. Finally, sprinkle with grated cheese and bake for 20 minutes until the potatoes are tender and golden brown. 8. Serve with grilled meat, fish or poultry, or just as it is! |
