Chicken Biryani

with UNCLE BEN'S Express Vegetable Pilau Rice

Ingredients

  • 250 g UNCLE BEN'S Express Vegetable Pilau Rice
  • 2 tbsp olive oil
  • 200 g chicken breasts sliced into strips
  • 1 onion, sliced
  • 3 cloves
  • 2 cm stick cinnamon
  • 3 pods cardamom, crushed
  • pinch cumin seeds
  • 50 g frozen peas

Baby spinach leaves instead of peas

Method

  1. Heat the oil in a pan and fry the chicken until golden and cooked. Remove from pan and keep warm in a bowl
  2. Add onion to the pan and cook for 8-10 minutes, until lightly brown
  3. Add spices and cook for 2-3 minutes before adding peas. Stir and add to the bowl of chicken
  4. Bring 30ml (2 tbsp) of water to the boil in the pan and add the rice. Cover and simmer for 2 minutes
  5. Spoon the onion and chicken mix onto the rice and recover for another 2 minutes
  6. Mix well and then serve
