250 g UNCLE BEN'S Express Mexican Rice

1/2 tbsp olive oil

1/2 red chilli, sliced

1 red onion, sliced

1 red pepper, sliced

1 yellow pepper, sliced

50 g chorizo

1 tsp parsley, freshly chopped

Method
- Heat the oil in a pan and sauté the onion and chilli for 2-3 minutes before adding the red and yellow pepper
- Cook for 5-6 minutes, stirring occasionally
- Heat the UNCLE BEN'S Express Mexican Style Rice
- Add the chorizo to the pepper mix and stir fry for 3-4 minutes
- Stir in the cooked rice and chopped parsley and serve
