Easy Spicy Chicken and Rice
with UNCLE BEN'S Express Mexican Rice

Ingredients

500 g UNCLE BEN'S Express Mexican Rice

400 g boneless skinless chicken breast

1 can tomatoes and chillies

1 clove garlic

1 medium onion

1 medium green pepper

2 tsp olive oil

1/4 tsp pepper

1/4 tsp paprika

Method
- Cut chicken into thin strips. Sprinkle with paprika and pepper
- Heat oil in a pan over medium heat
- Cook chicken, onion, green pepper and garlic in oil until tender, for about 4 minutes, stirring frequently
- Drain tomatoes, reserving liquid. Add water to liquid to equal 1-1/2 cups. Add liquid to pan and bring to a the boil
- Stir in rice and reserve tomatoes. Cover and remove from heat. Let stand until all liquid is absorbed, for about 5 minutes
