250 g UNCLE BEN'S Oriental Wok Rice

150 g sugar snap peas or mange tout

150 g baby sweetcorn

1 red pepper, sliced

1 courgette, sliced

200 g button mushrooms, sliced

40 g unsalted peanuts, chopped

1 tbsp vegetable oil

Method
- Heat the oil in a pan and stir fry the pepper, courgette and mushrooms and cook for 2-3 minutes until soft
- Add the sugar snap peas or mange tout and baby sweetcorn and cook for 1-2 minutes
- Stir in the UNCLE BEN'S Oriental Soy & 5 Spice Wok Rice and cook for 1-2 minutes
- Spoon into bowls and garnish with peanuts
