Ingredients

500 g UNCLE BEN'S Chilli Con Carne Sauce

350 g lean minced beef

4 long red peppers, halved

2 tomatoes, sliced

100 g halloumi, sliced

1 carrot, grated

100 g white cabbage, shredded

15 g toasted pumpkin seeds
-
15 g toasted sunflower seeds

1 tbsp lemon juice or cider vinegar
Method
- Heat the oil in a pan and add the minced beef bit by bit and cook until browned
- Add the UNCLE BEN'S Chilli Con Carne, stir well, then reduce the heat and simmer for 20-25 minutes
- Preheat oven to 190ºC/Gas Mark 5. Arrange peppers hollow side up in a baking tray and bake for 5 minutes
- Spoon in the chilli mix and top with sliced tomatoes and halloumi. Return to the oven to bake for 15-20 minutes
- Make the salad by mixing the carrot, cabbage, toasted seeds and lemon juice or cider vinegar
- Serve the peppers alongside the carrot and cabbage salad
