Salsa Baked Potatoes & Chilli

with UNCLE BEN'S Chilli Con Carne Sauce

Ingredients

  • 500 g UNCLE BEN'S Chilli Con Carne Sauce
  • 4 baking potatoes
  • 500 g lean minced beef
  • 1 red onion, chopped
  • 2 tomatoes, chopped
  • 1/4 cucumber, chopped
  • 2 sticks celery, chopped
  • 2 tbsp fresh parsley, chopped

Add a tin of cooked red kidney or mixed beans to boost the fibre

Method

  1. Preheat oven to 200ºC/Gas Mark 6. Put the potatoes on the top shelf and bake for 1 hour or until tender
  2. While potatoes are cooking, heat some oil in a pan and add the minced beef bit by bit and cook until browned
  3. Add the UNCLE BEN'S Chilli Con Carne, stir well and reduce the heat to simmer for 20-25 minutes
  4. Make the salsa by mixing the red onion, tomatoes, cucumber, celery, parsley and seasoning
  5. Split open the potatoes and fill them with the chilli mixture. Spoon the salsa on top and serve
