500 g UNCLE BEN'S Chilli Con Carne Sauce

4 baking potatoes

500 g lean minced beef

1 red onion, chopped

2 tomatoes, chopped

1/4 cucumber, chopped

2 sticks celery, chopped

2 tbsp fresh parsley, chopped

Add a tin of cooked red kidney or mixed beans to boost the fibre
Method
- Preheat oven to 200ºC/Gas Mark 6. Put the potatoes on the top shelf and bake for 1 hour or until tender
- While potatoes are cooking, heat some oil in a pan and add the minced beef bit by bit and cook until browned
- Add the UNCLE BEN'S Chilli Con Carne, stir well and reduce the heat to simmer for 20-25 minutes
- Make the salsa by mixing the red onion, tomatoes, cucumber, celery, parsley and seasoning
- Split open the potatoes and fill them with the chilli mixture. Spoon the salsa on top and serve
