Ingredients

250 g UNCLE BEN'S Express Mushroom Rice

1 tbsp olive oil

25 g butter

2 spring onions, sliced

2 cloves garlic, crushed

1 stick celery, sliced

4 flat mushrooms
-
1 tbsp parsley, freshly chopped

25 g Cheddar cheese, grated

Sunflower or olive oil spread instead of butter
Method
- Heat half the oil and the butter in a pan and sauté the spring onions, garlic and celery for 2-3 minutes
- Cut the stalk from the mushrooms, chop them, add to the pan and cook for 1-2 minutes then pour mix into a bowl
- Heat the UNCLE BEN'S Express Mushroom Rice and add to the bowl along with the parsley and mix well
- Heat the remaining oil in the pan and lay the mushrooms skin side down into the pan
- Spoon the rice mixture into each mushroom and cook for 4-5 minutes on a low heat
- Sprinkle each mushroom with grated cheese and place under a grill for 2-3 minutes until golden
