Ingredients

500 g UNCLE BEN'S Express Long Grain Rice

4 tbsp olive oil

1 onion, chopped

2 cloves garlic, crushed

3 tomatoes, crushed

175 g green beans

2 carrots, chopped

75 g frozen peas

2 red peppers, deseeded and chopped

1 pinch saffron

1 ltr vegetable stock
-
2 tbsp parsley, chopped

Method
- Heat the oil in a large oven proof pan and add the onions and garlic and cooks for 5 minutes, until wilted
- Then add the tomatoes, beans and carrots, and cook gently for 2-3 minutes
- Next, add the peas, peppers and UNCLE BEN'S Long Grain Rice and coat in the oil
- The add the saffron and cook for a further minute
- Next, add the hot stock to the pan and return to the boil
- Stirring constantly, cook for a further 10 minutes or until the liquid is absorbed and the rice is soft and cooked
- Finally, just before serving add the chopped parsley, and season to taste
