Sweet & Sour Chicken Pancakes

Ingredients

  • 350 g UNCLE BEN'S Sweet & Sour Sauce
  • 1 roasted chicken breast, skinned
  • handful coriander, chopped
  • 1 carrot, cut into strips
  • 1/4 cucumber, cut into thin strips
  • 4 spring onions, trimmed and shredded
  • 12 Chinese style pancakes

Using noodle nests instead of pancakes

Method

  1. Cut the chicken breast in half width ways and shred the meat into a bowl
  2. Stir in half the UNCLE BEN’S Sweet And Sour Sauce and the coriander and stir well
  3. Arrange the pancakes on a work surface and divide the chicken mixture between them
  4. Add a few carrots sticks, cucumber strips and spring onions and roll up to enclose. Serve immediately with the remaining sauce to dip into if liked
