Ingredients

500 g UNCLE BEN'S Sweet & Sour Extra Spicy Sauce

4 chicken breasts

4 tbsp greek or plain yoghurt

1/2 tsp chilli powder

dash Tabasco sauce

1/2 mango
-
1/2 cucumber, diced
-
4 spring onions, chopped
-
1/2 packet mint, freshly chopped

2 little gem lettuces, sliced

If spicy sauce is too strong, try the regular sweet and sour
Method
- Bring a large saucepan to the boil. Drop the chicken breast into simmer for 7-10 minutes until they are poached
- Drain the saucepan and leave the chicken to cool
- In a bowl mix the yoghurt, UNCLE BEN'S Extra Spicy Sweet & Sour Sauce, chilli, Tabasco and seasoning
- Add all but 1 tbsp of the chopped mint and mix. Add in the mango, cucumber and spring onions
- Dice the chicken and mix with the sauce
- Fill a bowl with lettuce and the sauce mix on top. Scatter the remaining mint on top of the salad
