Ingredients

500 g UNCLE BEN'S Sweet & Sour Sauce

2 tbsp soy sauce

2 tbsp honey

4 chicken breasts

1/4 iceberg lettuce or white cabbage, sliced

1/2 cucumber, sliced
-
1 red onion, sliced
-
1 punnet cherry tomatoes, halved

1 carrot
-
1 juice of lime

Method
- Mix the UNCLE BEN'S Sweet & Sour Sauce, honey and soy sauce in a pan. Bring to the boil and simmer for 10 minutes until sticky
- Marinade the chicken breasts in half the sauce for at least 1hour
- Grill the chicken breasts for 5 minutes each side turning occasionally and continuing to coat with the remaining sauce until cooked through and browned
- In a bowl, mix the lettuce or cabbage, cucumber, red onion and cherry tomatoes. Peel the carrot into the bowl and mix
- Make a dressing for the salad by mixing the lime juice and honey
- Serve the sliced chicken warm or cold on top of the dressed salad
