Tuna Rice

with UNCLE BEN'S Loose Wholegrain Rice

Ingredients

  • 125 g UNCLE BEN'S Loose Wholegrain Rice
  • 1 tbsp vegetable oil
  • 125 g frozen peas, thawed
  • 200 g tuna in brine, drained
  • 1 ripe tomato, deseeded and cut into thin wedges
  • 1 tbsp soy sauce
  • handful parsley, chopped

Method

  1. Tip the rice into a large pan of boiling water. Cover and simmer for 10 minutes. Drain well, cover and set aside
  2. Heat the oil in a large frying pan or wok and stir fry the rice over a high heat for 1-2 minutes
  3. Add the peas, tuna and tomato and stir fry for a further 2 minutes
  4. Stir in the soy sauce and parsley and heat through
  5. Serve immediately
