Chargrilled Chicken with Wholegrain & Mediterranean Vegetable Rice

About This Dish


  • 1 chicken breast
  • 1 small handful of sundried tomatoes
  • 2 handfuls of frozen peas
  • 1/2 cucumber
  • 2 handfuls of pomegranate seeds
  • 1 handful of parsley leaves
  • 1 pouch UNCLE BEN'S® Wholegrain Mediterranean Vegetable Rice 250g


  1. • Pre heat a griddle pan on a medium heat. • Slice the chicken breast length ways in half and lightly oil. • Place the chicken on to the griddle pan and cook for 5 minutes on each side.
  2. • While the chicken is cooking roughly chop up the sundried tomatoes, parsley and cucumber. • Roll the pomegranate on a chopping board to make the seeds easier to remove. • Slice the pomegranate in half then using a big spoon hit the back of the pomegranate releasing the seeds. Keep hitting the back until all the seeds are removed then repeat on the second half. • In a microwave safe bowl add the peas and 2 tbsps. of warm water then microwave the peas on full heat for 2 minutes, drain off the water and set aside.
  3. • Squeeze the Uncle Ben’s® Wholegrain & Mediterranean Vegetable Rice pouch to separate rice, tear a 3cm vent and then microwave on full power for 2 minutes. • Once the chicken is completely cooked slice into 1cm strips. • In a large bowl add all the ingredients and mix together to create the salad, serve up and enjoy!
