Grilled Salmon with Tomatoes

Salmon is great on the barbeque, but replicated here as we grill in the oven combined with fresh flavours. A super quick and easy meal makes it perfect for midweek supper!

  • 1tbsp Olive Oil
  • 2 Salmon Fillets
  • 1 Red Onion, finely sliced
  • 150g Cherry Tomatoes, halved
  • 1 Garlic Clove, crushed
  • 2tsp Capers, drained
  • 1tbsp Parsley, chopped
  • 250g Uncle Ben’s Lemon & Thyme Rice


  1. Preheat grill to high. Place the onion, tomatoes, garlic and capers in a bowl and mix to combine. Add the oil to an oven-safe frying pan and place the salmon fillets in the pan skin side down. Rub with oil and season well.
  2. Fit the tomato mixture around the salmon and place the pan under the grill for 10-15 minutes until the salmon is opaque and firm. Turn half way if the flesh is beginning to brown too much.
  3. Remove the pan from the oven and cook the Uncle Ben's rice according to pack instructions. Split between two dishes and top with the salmon fillets, followed with the tomato and onion mixture. Sprinkle with the chopped parsley and enjoy!
